Chicken Faux Pho

Hi Everyone!

My beautiful daughter and son-in-law are pregnant with twins.  Holy Macaroni!  We are blessed, excited and eagerly awaiting the arrival of these two little sweet peas!

So, when my daughter developed a craving for pho and has no time to cook as she is a busy marketing social media person, the mamma looked to figure out how to make her craving easy and work for her life-style.

I experimented with stocks, broths, spices, veggie adds, garnishes etc.  The following recipe is major OMG and you can customize to your own liking. Best of all, you can put it in the slow-cooker and there you go!

Slow Cooker Chicken Pho

  • Yield: 10 to 12 servings
  • Prep Time: 15 to 20 minutes
  • Cook Time: 9 hours

Ingredients

  • 3 X boneless chicken breasts
  • 10 cups chicken broth or stock or mix them
  • 10 X whole Star Anise
  • 8 X whole Cloves
  • 1 X Cinnamon stick
  • 2.5 tbls light brown sugar
  • 2.5 tbls fish sauce
  • ginger, peeled and finely sliced (about a 2
  • 5 cups chopped Bok Choy (trim bottom butt and throw away)
  • 1.5 cups Mung Bean Sprouts
  • 1/2 cup thinly sliced radishes
  • 1 cup sugar peas cut in half
  • 1 cup thinly sliced julienne carrots
  • 1/2 cup finely minced red onion
  • 6 oz thin Chinese rice noodles
  • Optional - Basil leaves, Cilantro (minced), limes (sliced), Thai chilies, Hot Sauce (Siraccha), Hoisin Sauce

Instructions

  1. Clean and trim fat from chicken breasts, then place cleaned chicken breasts on bottom of slow cooker

  2. Add broth/stock mixture

  3. Add All ingredients "Star Anise through Peeled Ginger"

  4. Cover and cook at medium for 6 to 8 hours, it should simmer steady for the whole period.

  5. When meat is tender and begins to fall apart remove from cooker and allow to cool.

  6. Add the rest of the ingredients into the remaining broth and cook for about 30 minutes

  7. Thinly slice or pull apart the breasts and add for an additional 30 minutes.

  8. Cook noodles per package instruction and set aside.

  9. Place about 1/2 cup noodles in a soup bowl and cover with the Pho mixture.

Notes

Add 1 teaspoon Hoisin Sauce and Hot sauce to taste.
Sliced Lemons and Cilantro add additional spice to the soup.
Garnish however you want, this is seriously Pho-namenal.
This freezes well and is great to make small servings you can store in quart bags for individual meals.
