Corn Relish

Hi everyone!

Here’s how you can use that wonderful leftover corn on the cob.  Folks will rave!!!

This relish is one of the most requested dishes I am asked to bring – yummy, fast, and uses what you have.  I have served it as a quick appetizer with baguettes, chips and crackers, then it moves to the main meal as a side!  Never any leftovers!

Easy Corn Relish

  • Yield: 3 to 4 cups
  • Prep Time: 10 minutes

Ingredients

  • 1 jar corn relish or succotash (from a specialty shop)
  • 1 - 2 cups leftover cooked corn taken off the cob
  • ½ red pepper chopped
  • ½ cup (or as much/little as you like) minced red onion
  • If I have peppadew peppers I mince some of those and throw them in as well! 
  • Diced tomatoes – as much as you like – I use about ½ of a regular sized tomato.
  • mustard of your choice, I use Dijon or honey mustard
  • garlic powder or fresh minced to taste
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp chipotle or adobe powder
  • Feta cheese - crumbled

Instructions

  1. Mix all the ingredients up to the feta. Taste for your preference in seasonings. When satisfied, crumble the feta over the top. I am pretty liberal with the feta – adds great flavor and does not break down in the relish.

Notes

While this recipe calls for a jar of corn relish, it is used to enhance to overall flavor of the final product. I like to use jar products because there are so many of them that make cooking fun and easy.
